Ingredients

  • 1½ pounds (720 g) beef braising steak, chunked
  • 1 large white onion, peeled and sliced
  • 1 large carrot, peeled and sliced
  • 2 beef stock cubes
  • 2½ cups (625 ml) hot water
  • 4 tablespoons tomato paste
  • 1 tablespoon dried thyme
  • 3 bay leaves
  • 5 tablespoons cornflour
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon vegetable oil
  • 1 large egg, beaten
  • 22 oz (660 g) puff pastry

Method

Step 1

Sprinkle cubed beef with 1/2 teaspoon salt and black pepper. Coat seasoned meat with vegetable oil, then place it in a hot pan and sear on all sides for 1-2 minutes. Remove seared beef from the pan and transfer it to a slow cooker.

Step 2

Add all vegetables to the cooker, then sprinkle them with corn flour, dried thyme, bay leaves, and remaining black pepper. Stir well.

Step 3

In the hot water, melt the beef cubes, then pour the beef mixture over the meat and vegetables in the crockpot. Add the tomato paste and sugar and stir well.

Step 4

Close the pot and cook on a low-heat setting for 8 hours.

Step 5

Turn off the cooker and open the lid. Remove cooked beef and vegetables from the slow cooker, transfer to a large plate and allow to cool.

Step 6

Brush the rim of each dish with beaten egg and then line them with a strip of pastry all the way around. Brush the top of the strips again. Place the lid on top of the pastry so it sits over the dough neatly and press down with your fork. Clean off the excess pastry around the edge of your dish

Step 7

Place the pie in the preheated oven and cook at 400 F (200 C) for 20 minutes. Serve warm.
