Slow cooker tomato pot roast recipe. Beef pot roast with vegetables and spices cooked in a slow cooker. This is one of my favorite beef recipes, really simple and delicious. I used beef chuck roast to prepare this dish. Also, you will need beef broth (preferably homemade), spices, such as garlic powder, smoked paprika, chipotle powder, and ground cumin.

Slow Cooker Tomato Pot Roast Recipe


  • 3 pounds (!.44 kg) beef chuck roast, cut into cubes
  • 2 teaspoons kosher salt
  • 2 teaspoons garlic powder
  • 1½ teaspoons chipotle powder
  • 1½ teaspoons smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon allspice
  • 2 tablespoons olive oil
  • 1 medium yellow onion, peeled and diced
  • 2½ cups (625 ml) low-sodium beef broth
  • 2 (14½ oz (435ml) each) cans diced tomatoes, undrained
  • chopped fresh parsley


Step 1

In a small mixing bowl, combine all dry ingredients. Mix well.

Step 2

Place cubed beef in a large bowl. Stir in the dry mixture and set aside.

Step 3

In a large nonstick skillet, heat the olive oil over medium-high heat. Working in batches, add seasoned meat and sear, stirring occasionally, until browned. Remove cooked meat from the skillet and transfer to a large bowl.

Step 4

Place diced onion in 6-quart (6 L) slow cooker. Top with seared beef. Pour the beef broth and diced tomatoes over the meat.

Step 5

Close the pot and cook on low-heat setting for 8 hours, or until beef and vegetables are tender.

Step 6

Turn off the slow cooker and open the lid. Stir the beef mixture well.

Step 7

Transfer to serving plates. Sprinkle with chopped fresh parsley. Serve hot.
