These ribs have a sweet and spicy flavor! There’s a hint of chipotle chile pepper and cinnamon, plus brown sugar and maple syrup for added sweetness. The best part is you can make them ahead of time and either finish them on the grill or in the oven just before serving.


  • 1/4 cup (60 g) brown sugar
  • 1 tablespoon chili powder
  • 2 teaspoons chipotle chile pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 3 pounds (1.45 kg) pork baby back ribs
  • 1/4 cup (60 ml) water
  • 1/2 cup (125 g) maple syrup
  • 1 teaspoon ground cinnamon


Step 1

Preheat your oven to 375 F (180 C).

Step 2

In a small mixing bowl, combine chipotle chile pepper, brown sugar, chili powder, ground cinnamon, garlic powder, and sea salt. Mix well. Rub pork ribs with the spice mixture.

Step 3

Line a roasting pan with aluminum foil. Arrange spiced ribs in a single layer on foil-lined roasting pan. Pour 1/4 cup water over the pan and cover with aluminum foil.
