Slow cooker sweet potato soup. Sweet potatoes are great for making soup. When cooked slowly, they become soft and tasty, while also adding vitamins and making the soup thicker.

How to Make Sweet Potato Soup in a Slow Cooker

To start, gather your ingredients including 2 1/2 lb. sweet potatoes, 1 onion chopped, 3 garlic cloves chopped, and a 2-inch piece of fresh ginger cut into 1/2-inch pieces.

Begin by peeling and chopping the sweet potatoes, then add them to your slow cooker along with the chopped onion, garlic, and ginger. Pour in 4 cups of vegetable stock to create a flavorful base for your soup.

Set your slow cooker to low heat and let the ingredients simmer for several hours until the sweet potatoes are tender and the flavors have melded together. The slow cooking process allows the sweet potatoes to soften and release their natural sweetness, enhancing the overall taste of the soup.

Once the sweet potatoes are fully cooked, use an immersion blender to blend the soup until smooth and creamy. Season with salt and pepper to taste, and garnish with your favorite toppings such as fresh herbs or a dollop of yogurt.

Enjoy a warm and comforting bowl of sweet potato soup, packed with nutrients and flavor, thanks to the magic of your slow cooker.

Sweet Potato Soup Serving Suggestions

For serving suggestions, consider adding a dollop of Greek yogurt on top of your potato soup for a creamy and tangy contrast. Another option is to sprinkle some crispy bacon bits over it to add a savory crunch.

To enhance the flavors, you can drizzle a swirl of olive oil and a sprinkle of fresh herbs such as parsley or chives. This will not only elevate the taste but also add a pop of color to your dish.

For a more filling meal, serve the sweet potato soup with a side of crusty bread or a simple green salad. The bread can be used for dipping into the soup, soaking up all the delicious flavors.

If you’re looking for a touch of sweetness, consider adding a sprinkle of cinnamon or a drizzle of maple syrup on top of the soup. These additions will complement the natural sweetness of the sweet potatoes and create a delightful flavor profile.

Experiment with different toppings and sides to find your favorite way to enjoy this comforting and nutritious sweet potato soup.

How to Store Leftovers

To store leftover sweet potato soup, ensure it has cooled to room temperature before transferring it to an airtight container. Refrigerate it promptly to maintain its freshness and flavor. When properly stored, the sweet potato soup can last in the refrigerator for up to 4-5 days.

For longer storage, consider freezing it. Portion it into individual servings or larger containers, leaving some room for expansion, and seal it tightly. Frozen sweet potato soup can last for 2-3 months in the freezer.

When ready to enjoy the leftovers, thaw frozen soup overnight in the refrigerator or gently reheat directly from frozen on the stovetop, stirring occasionally to prevent sticking. Add a splash of vegetable stock or water if needed to adjust the consistency.
