Baked cod fillets with onions and leeks. Skillet fried cod fillets.Very easy and delicious!

Ingredients

  • 1½ pounds (750 g) cod fillets
  • 3 tablespoons freshly squeezed lemon juice
  • 2 onions,peeled and chopped
  • 2 leeks,trimmed and chopped
  • 2 leeks,trimmed and chopped
  • 2 tablespoons olive oil
  • 5 oz (150 ml) dry cider
  • 2 tablespoons chopped parsley
  • salt to taste

Method

Step 1

In mixing bowl,combine cod fillets with lemon juice and salt. Mix well.

Step 2

Heat olive oil in nonstick skillet.Add onions and leeks.Cook until softened. Add fish fillets with any juices,and cider to skillet.Cook for 15 minutes,until fillets are tender.

Step 3

Sprinkle baked cod fillets with parsley. Serve hot with mashed potatoes.
