Baked Cod Fillets with Onions and Leeks
Ingredients
- 1Β½ pounds (750 g) cod fillets
- 3 tablespoons freshly squeezed lemon juice
- 2 onions, peeled and chopped
- 2 leeks, trimmed and chopped

- 5 oz (150 ml) dry cider
- 2 tablespoons chopped parsley
- salt to taste
Method
Step 1
In a mixing bowl, combine cod fillets with lemon juice and salt. Mix well.
