Baked cod fillets with onions and leeks. Skillet fried cod fillets. Very easy and delicious!
Ingredients
- 1½ pounds (750 g) cod fillets
- 3 tablespoons freshly squeezed lemon juice
- 2 onions,peeled and chopped
- 2 leeks,trimmed and chopped
- 2 leeks,trimmed and chopped
- 2 tablespoons olive oil
- 5 oz (150 ml) dry cider
- 2 tablespoons chopped parsley
- salt to taste
Method
Step 1
In mixing bowl,combine cod fillets with lemon juice and salt. Mix well.
Step 2
Heat olive oil in nonstick skillet.Add onions and leeks.Cook until softened. Add fish fillets with any juices,and cider to skillet.Cook for 15 minutes,until fillets are tender.
Step 3
Sprinkle baked cod fillets with parsley. Serve hot with mashed potatoes.
