Baked cod fillets with onions and leeks. This baked cod recipe is simple and flavorful. Cod fillets are baked with leeks and onions for a dish that’s perfect for seafood lovers who want to avoid frying.

Baked Cod Fillets with Onions and Leeks

Ingredients

  • 1½ pounds (750 g) cod fillets
  • 3 tablespoons freshly squeezed lemon juice
  • 2 onions, peeled and chopped
  • 2 leeks, trimmed and chopped
  • 2 leeks, trimmed and chopped
  • 2 tablespoons olive oil
  • 5 oz (150 ml) dry cider
  • 2 tablespoons chopped parsley
  • salt to taste

Method

Step 1

In a mixing bowl, combine cod fillets with lemon juice and salt. Mix well.

Step 2

Heat olive oil in a nonstick skillet. Add onions and leeks. Cook until softened. Add fish fillets with any juices, and cider to the skillet. Cook for 15 minutes, until fillets are tender.

Step 3

Sprinkle baked cod fillets with parsley. Serve hot with mashed potatoes.
