Ingredients
- 4 pounds (2 kg) chuck steak,cubed
- dry red wine
- bouquet garni
- 4 yellow onions,peeled and sliced
- 3/4 cup (180 g) unsalted butter
- 1 cup (250 ml) dry white wine
- 1 pound (500 g0 mushrooms
- chopped fresh parsley,for garnish
- 20 small onions
- salt and freshly ground black pepper
Method
Step 1
Place cubed meat in stainless steel bowl. Cover with dry red wine and add the bouquet garni. Refrigerate for 24 hours.
Step 2
Remove marinated beef from refrigerator. Drain,reserving the marinade.
Step 3
In a heavy casserole,sate sliced onions in 1/3 of butter until golden. Add marinated beef and brown on all sides for 10 minutes. Pour over reserved marinade and season to taste with salt and black pepper.
Step 4
Increase ti high and bring to a boil,then reduce heat to low and simmer until beef is tender(for about 1 Β½-2 hours).
Step 5
Saute the small onions whole in the remaining butter until soften. Pour over dry white wine and allow onions to poach gently. Add the beef with mushrooms 5 minutes before serving.
Step 6
Sprinkle with chopped fresh parsley and serve.
