Best creamy yogurt coleslaw recipe. Very easy and delicious vegetable recipe. An excellent combination of shredded cabbage and grated carrot. If you like coleslaw, you may also like Confetti Coleslaw
Confetti Coleslaw Recipe
Makes 4 servings
Ingredients: 1/4 cup (60 ml) plain reduced-fat yogurt, 2 tablespoons buttermilk, 2 teaspoons grated yellow onion, 2 teaspoons prepared yellow mustard, 1 teaspoon granulated sugar, 1/4 teaspoon caraway seeds, 1/4 teaspoon freshly ground black pepper, 1/8 teaspoon dill weed, 3/4 cup coarsely shredded green cabbage, 1/2 cup coarsely shredded red cabbage, 1/4 green bell pepper, cored, seeded, and thinly sliced, 1/4 red bell pepper, cored, seeded, and sliced into strips, 1/2 small carrot, peeled and coarsely grated
Instructions: In a large mixing bowl, combine yogurt, buttermilk, grated yellow onion, mustard, granulated sugar, caraway seeds, black pepper, and dill weed. Mix well, then add remaining ingredients and toss well.
Cover and refrigerate for 2-3 hours, tossing occasionally. Remove cooled salad from the refrigerator. Serve cold.
Bacon-Flavored Coleslaw Recipe
Makes 2 servings
Ingredients: 2 cups finely shredded green cabbage, 2 tablespoons finely sliced scallion, 1/4 teaspoon caraway seeds, 3 tablespoons white wine vinegar, 2 tablespoons water, 1 teaspoon olive oil, 2 teaspoons imitation bacon bits, divided
Instructions: In a medium mixing bowl, combine shredded cabbage, scallions, and caraway seeds. Toss well and set aside. In a small saucepan, combine vinegar, water, olive oil, and 1 teaspoon bacon bits. Stir well and bring the mixture to a boil over medium-high heat.
Pour over cabbage mixture and toss well to combine. Cover and refrigerate for at least 3 hours.
Buttermilk Coleslaw Recipe
Makes 4 servings
Ingredients: 2 cups shredded green cabbage, 1/2 cup (125 ml) buttermilk, 1 tablespoon freshly squeezed lemon juice, artificial sweetener to equal 1 teaspoon sugar, 1 teaspoon salt, 1/4 teaspoon celery seeds, 1/4 teaspoon freshly ground black pepper, dash garlic powder
Instructions: In a medium mixing bowl, combine all ingredients. Mix well, then cover and refrigerate until chilled, for at least 1 hour. Remove buttermilk coleslaw from the refrigerator. Toss well before serving.

- 3 tablespoons plain low-fat yogurt
- 2 tablespoons sour cream
- 3/4 teaspoon prepared yellow mustard
- 1/2 teaspoon granulated sugar
- 1/2 teaspoon cider vinegar
- 1/4 teaspoon celery seeds
- 1/8 teaspoon salt and 1/8 teaspoon freshly ground black pepper
- 1ΒΎ cups coarsely shredded cabbage
- 1/4 cup coarsely grated carrot
Method
Step 1
In a medium mixing bowl, combine all ingredients, except shredded cabbage and grated carrot. Mix well.
Step 2
Add the cabbage and carrot. Toss well to mix.
Step 3
Wrap with plastic wrap and refrigerate for 2-3 hours, tossing occasionally. Remove from refrigerator., transfer to a serving plate. Serve cold.
