Ham and Cheese Phyllo Bundles Recipe

Ham and cheese are a classic and traditional pairing.

Makes 24 bundles
Ingredients: 1 recipe Phyllo Bundles (recipe follows) 2 tablespoons (30 ml) homemade mayonnaise, 1 teaspoon (7 ml) Dijon mustard, a pinch of cayenne pepper, 2 cups (500 ml) shredded Swiss cheese, 4 oz (120 g) diced ham, 1 red bell pepper, roasted and minced, freshly ground black pepper, to taste

Instructions: In a small mixing bowl, combine mayonnaise, mustard, and cayenne pepper. Mix well, then stir in remaining ingredients, season with black pepper and mix again.

Place about 1½ tablespoons (23 ml) of filling in the center of each phyllo square. Fold sides up, then twist to close.

Arrange bundles in mini-muffin cups and brush tops with melted butter. Repeat until phyllo squares are filled. Preheat the oven to 350º F (175º C). Bake in the preheated oven until pastry is golden and cheese is melted, for about 15-20 minutes.

Turn the oven off and remove baked bundles. Transfer to a serving platter. Serve warm.

Phyllo Bundles Recipe

Makes 24 bundles

Ingredients: 6 sheets phyllo pastry, thawed, 1/3 cup (80 ml) unsalted butter, melted

Instructions: Arrange the dough phyllo pastry on work surface. On a large cutting board, stuck 3 sheets at a time. Cut phyllo into 12 equal squares and cover with damp towel. Place 8 dough squares on the board and brush with melted butter. Top with second phyllo square at a 45º angle and brush with melted butter.

Place the third square on top of the other 2, in the original position. Brush with melted butter. Repeat with remaining phyllo pastry and butter. Fill the squares with the desired filling, then place in muffin cups, twist to close and brush with melted butter.

Bake in preheated oven according to recipe directions.

Best Ham-Stuffed Eggs Recipe

Ingredients

  • 6 hard cooked eggs
  • ham,cut into small cubes
  • 3 tablespoons unsalted butter, at room temperature
  • 2 tablespoons mayonnaise
  • 1 teaspoon Worcestershire sauce
  • salt and freshly grpound black pepper

Method

Step 1

Peel and cut the eggs in half lengthwise and remove the yolks. Arrange the egg halves on a cake rack and add a cube of ham, olive or pimiento to each cavity.

Step 2

Force the egg yolks through a food mill or fine sieve. Add the remaining ingredients and beat well with a wire whisk. Fit a pastry bag with a large star tube and spoon the egg yolk mixture into it. Hold the pastry bag close to an almost parallel with the cavity. Force the mixture through the tube, moving in a zigzag fashion.

Step 3

Note: The eggs may be cut in half widthwise and stuffed. If they stuffed in this fashion, use a sharp paring knife to trim off a bit of the round bottom portion of each half and discard. This will permit the egg halves to stand upright. To fill the halves, arrange them on a cake rack and hold the pastry tube directly over the cavity. Fill the halves to produce a spiral effect. At the height of the spiral, raise the tube quickly to form a small peak.
