Classic Instant Pot Cornbread Recipe

Ingredients

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 2/3 cup granulated sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 large egg, beaten
  • 1 cup (250 ml) milk
  • 1/2 cup (125 ml) vegetable oil
  • 1 cup (250 ml) water

Method

Step 1

In a large mixing bowl, combine beaten egg, milk, and vegetable oil. Mix until well combined.

Step 2

Stir in the dry ingredients and mix well.

Step 3

Grease a baking dish with nonstick cooking spray. Pour the batter into the greased baking dish, then cover with paper towel and wrap with aluminum foil.

Step 4

Pour the water into an electric instant pot, then put in the trivet with handles facing up. Arrange the foil-covered dish on a trivet.

Step 5

Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 55 minutes.

Step 6

Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid. Remove baked cornbread from the cooker, using mittens.

Step 7

Invert the cornbread on the plate, removing the foil and paper towels. Cool down for 5-10 minute, then slices and serve.

    I reduced the sugar to 1/2 cup but everything else was according to recipe. The outsides cooked (and taste) perfectly but the centre 2” was basically raw. I have it now in my oven to hopefully get the centre cooked.

    Should I cook it in the instapot a little longer next time?

    I made this today. Seeing the previous comments I decided to cook it for 60 minutes and did a 5 minute slow release. It came great…
