Ingredients
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 2/3 cup granulated sugar
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1 large egg, beaten
- 1 cup (250 ml) milk
- 1/2 cup (125 ml) vegetable oil
- 1 cup (250 ml) water
Method
Step 1
In a large mixing bowl, combine beaten egg, milk, and vegetable oil. Mix until well combined.

Stir in the dry ingredients and mix well.
Step 3
Grease a baking dish with nonstick cooking spray. Pour the batter into the greased baking dish, then cover with a paper towel and wrap with aluminum foil.
Step 4
Pour the water into an electric instant pot, then put it in the trivet with handles facing up. Arrange the foil-covered dish on a trivet.
Step 5
Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 55 minutes.
Step 6
Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid. Remove baked cornbread from the cooker, using mittens.
Step 7
Invert the cornbread on the plate, removing the foil and paper towels. Cool down for 5-10 minutes, then slices and serve.
