Country Beef Steak Recipe
Makes 1 serving
Ingredients: 5 oz (0.19 kg) beef top or bottom round steak, 1 tablespoon vegetable oil, ½ cup (125 ml) canned tomatoes, chopped, ½ cup sliced celery, ½ cup sliced fresh mushrooms, ¼ cup diced green bell pepper, 1 garlic clove, peeled and minced, ½ cup (125 ml) mixed vegetable juice, 2 teaspoons onion flakes, 1/8 teaspoon freshly ground black pepper, dash salt, fresh chopped parsley for garnish
Instructions: Preheat the broiler. On rack in broiler pan, broil steak, turning once, until rare for about 5 minutes. While steak is broiling, heat vegetable oil in a 1-quart (1L) saucepan. Add tomatoes, sliced celery, mushrooms, green bell pepper, and minced garlic. Stir well and sauté, stirring occasionally, for 3 minutes.
Stir in vegetable juice, onion flakes, black pepper, and salt. Bring mixture to a boil over medium-high heat. Add beef steak and spoon vegetable mixture over the meat. Cover the pan, then reduce the heat to low and simmer until beef is tender, for about 45 minutes. Sprinkle with fresh chopped parsley. Serve hot.
Beef Steak with Mushrooms
Makes 4 servings
Ingredients: ¾ cup (180 ml) chicken stock, 2 tablespoons plus 2 teaspoons dry sherry, 2 teaspoons arrowroot, dissolved in 1 tablespoon water, 1 tablespoon plus 1 teaspoon vegetable oil, 4 garlic cloves, peeled and smashed, 4 slices pared ginger, 1 cup (0.24 l) sliced fresh mushrooms, 1 cup (0.24 l) green bell peppers, striped, ½ cup sliced yellow onions, ½ cup (125 ml) canned water chestnuts, 1 pound (0.45 kg) broiled flank steak, thinly sliced diagonally across the grain
Instructions: In a small mixing bowl, chicken stock, sherry, and dissolved arrowroot. Stir well and set aside. Heat vegetable oil in a large nonstick skillet. Add smashed garlic and sliced ginger and sauté, stirring, until lightly browned. Remove and discard garlic pieces and ginger slices.
To the same skillet, add mushrooms, green bell pepper strips, onion, and water chestnuts. Cook, stirring quickly and frequently, until tender-crisp, for about 3 minutes. Stirring constantly, add the reserved stock mixture to the skillet, and cook until thickened.
Add beef steak and cook until thoroughly heated. Serve hot.
Classic Teriyaki Beef Steak Recipe
Ingredients
- 5 oz (150 g) beef top or bottom round steak,
- 1/2 cup (125 ml) water
- 1 tablespoon onion flakes
- 1 tablespoon minced ginger
- 1 tablespoon soy sauce
- 1 teaspoon Worcestershire sauce
- 1 garlic clove, peeled
Method
Step 1
Place beef steak in a shallow pan. In a blender, combine remaining ingredients. Blend until smooth. Pour mixture over beef steak. Cover pan and refrigerate for at least 1 hour.
Step 2
Preheat broiler. Transfer marinated beef steak to a rack in broiler pan and drain marinade into small saucepan. Broil marinated meat, turning once, until tender.
Step 3
While steak is broiling, bring marinade to a boil over medium-high heat. Reduce heat to low and simmer for 5 minutes.
Step 4
Slice beef steak diagonally across the grain. Serve with hot marinade.
