Slow Cooker Sweet Potato Loaf with Apple-Cranberry Relish

Makes 6 servings

Ingredients: 1¼ cups coarsely grated and peeled sweet potatoes, 1/3 cup finely chopped yellow onion, 1/3 cup shredded tart apples, 1/4 cup raisins, 1/2 teaspoon dried thyme leaves, 1/4 teaspoon ground cinnamon, 1/8 teaspoon ground nutmeg, 1/4 cup all-purpose flour, 1/4 cup (60 ml) orange juice, salt and freshly ground black pepper, to taste, 1 large egg, beaten, Apple-Cranberry Relish Recipe (see recipe below)

Instructions: In a large mixing bowl, combine all ingredients, except egg, seasoning, and Apple-Cranberry Relish. Mix well. Season to taste with salt and black pepper. Stir in beaten egg. grease loaf pan with nonstick cooking spray. Place potato mixture in the greased pan and cover securely with aluminum foil.

Place on rack in 6-quart (6 L) slow cooker. Pour in 2 inches (5 cm) hot water. Cover slow cooker and cook on high-heat setting for 3 hours or until potatoes are tender. Turn off slow cooker and remove cooked sweet potato mixture. let stand on wire rack for 5 minutes, then transfer to serving plate. Slice potato loaf and serve with Apple-Cranberry Relish

Apple-Cranberry Relish Recipe

Makes 1 cup (250 ml)

Ingredients: 1/2 cup (125 ml) whole-berry cranberry sauce, 1/4 cup chopped tart apple, 1/4 cup orange segments, 2 tablespoons chopped pecans or walnuts, 2-4 tablespoons granulated sugar, 1 tablespoon grated orange or lemon zest

Instructions: In a large mixing bowl, combine all ingredients. Mix well. Serve with Sweet Potato Relish

Crock Pot Sweet Potato Pudding Recipe

Ingredients

  • vegetable cooking sray
  • 4 medium sweet potatoes, peeled and cut into cubes
  • 1/4 cup (60 ml) orange juice
  • 1-2 tablespoons unsalted butter
  • 1/4 cup brown sugar
  • 1 tablespoon grated orange zest
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3 large eggs, lightly beaten

Method

Step 1

Grease crockpot with vegetable cooking spray. Add sweet potatoes.

Step 2

Cover and cook on high-heat setting until potatoes are tender, for about 3 hours.

Step 3

Remove cooked sweet potatoes from crockpot. Mash with remaining ingredients, except eggs. Stir in beaten eggs.

Step 4

Return potato mixture to crockpot. Cover and cook on high-heat setting for further 30 minutes.

Step 5

Turn off crockpot. Transfer cooked sweet potato pudding to serving plate. Slice and serve hot.
