Easy cream cheese coffee cake recipe. Very easy and delicious, Plain Milk Bread Dough based dessert baked in an oven. Learn below how to prepare this dough.

Plain Milk Bread Dough Recipe

Ingredients: 4 cups all-purpose flour, 1 teaspoon salt, 1/4 oz (120 g) dry yeast, 1 tablespoon granulated sugar, 1¼ cups (310 ml) milk, 1/4 cup unsalted butter, extra flour or milk, as required

Instructions: Sift all-purpose flour and salt into a large warm mixing bowl. make a hollow in the center of the flour mixture. Cream the compressed yeast and sugar. warm 1/4 cup (60 ml) of the milk and add to the yeast and sugar mixture. Mix well.  If using dry yeast, add together with the sugar to the 1/2 cup (125 ml) warm milk, and leave until frothy, for about 10 minutes.

Pour into the hollow. Stir in the sufficient of the surrounding flour to make a light, soft batter. Cover the bowl with a cloth and stand in a warm place. Allow standing until the batter in the center looks spongy and is full of bubbles. melt the butter, add the rest of the milk, and warm slightly.

Pour the milk and butter mixture over the flour and the “sponge” in the bowl and mix to a soft dough, using extra flour or warm milk as required.

Knead the dough in the bowl until it is smooth and elastic, and leaves the sides of the bowl clean and comes away from the hand.

Shape the dough into a ball and press it down in the bottom of the bowl. Sprinkle lightly with flour. Return the bowl to a warm place, cover with a cloth, and allow the dough to rise until it doubles in bulk and a finger imprint on the surface of it disappears quickly.

Punch the dough down and knead it lightly again. The dough is now ready for shaping.

Easy Cream Cheese Coffee Cake Recipe

Ingredients

  • 1/2 quanityty Plain Milk Bread Dough
  • For Topping:
  • 2 cups (500 ml) creamy cottage cheese
  • finelly grated rind of 1 lemon
  • 2 large eggs, beaten
  • 1/2 cup (60 ml) unsalted butter, melted
  • 1/2 cup vanilla sugar
  • 1/4 cup (60 ml) cream
  • 2 tablespoons custard powder

Method

Step 1

To make the topping: Rub the cottage cheese through a sieve. Add all remaining topping ingredients and mix well.

Step 2

To make the cake: press out the dough with floured hands to cover the bottom of a jelly roll pan. Spread the filling over the dough. Allow the cake to rise in a warm place for about 30 minutes, or until almost fills the pan.

Step 3

Preheat the oven to 400 F (200 C). bake in preheated oven for 10 minutes, then reduce temperature to 350 F (175 C) and bake for a further 40 minutes, or until the topping has set.

Step 4

Slide the cake onto a wire cooling rack and allow to cool, Serve cut intop small squares.
