Crockpot Chicken, Vegetable, and Pasta Stew Recipe

Sun-dried tomatoes and black olives give unbelievable flavor to this chicken-vegetable stew.

Makes 4 servings

Ingredients: 1 pound (480 g) boneless and skinless chicken breasts, cut itno1-inch (2.5 cm) cubes,  1 can (14½ oz (435 ml)) Italian-seasoned diced tomatoes, undrained, 3/4 cup (180 ml) low-sodium fat-free chicken broth,  1 cup sliced carrots, 1/2 cup chopped yellow onion, 1/2 cup chopped green bell peppers, 2 teaspoons minced garlic, 2 bay leaves, 1 teaspoon dried marjoram leaves, 3 tablespoons chopped sun-dried tomatoes (not in oil), 1/4 cup pitted Greek olives, halved, 2 yellow summer squash, cut into cubes, 1 cup small broccoli florets, 4 oz (120 g) cooked rigatoni, warm, salt and freshly ground black pepper

Instructions: In a crockpot, combine all ingredients, except Greek olives, squash, broccoli, cooked rigatoni, and seasoning. Cover and cook on high heat setting for 4-5 hours, adding squash, broccoli, and cooked rigatoni during the last 20 minutes.

Turn off the crockpot. Open the lid and discard bay leaves. Season stew with salt and black pepper. Stir well. Ladle into soup bowls. Serve hot.

Makes 4 servings

Ingredients: 1 pound (480 g) boneless and skinless chicken breasts, cut into cubes, 1 can (14½ oz (435 ml)) crushed tomatoes, 1/2 cup (125 ml) low-sodium fat-free chicken broth, 1½ cups chopped yellow onions, 1 cup quartered fresh mushrooms, 1/2 cup finely chopped celery, 1/2 cup finely chopped carrots, 2 cloves garlic, peeled and minced, 1 teaspoon dried Italian seasoning, 1 cup chopped zucchini, salt and freshly ground black pepper, 1/2 pound (240 g) cooked ziti, warm

Instructions: In a crockpot, combine all ingredients, except zucchini, seasoning, and cooked ziti. Cover and cook on high-heat setting for 4-5 hours, adding chopped zucchini during last 20 minutes. Turn off the crockpot. Open and season to taste with salt and black pepper. Stir well. Serve over cooked ziti.

  • 1 can (14½ oz (435 ml)) chunky Italian-seasoned crushed tomatoes
  • 1 cup sliced yellow onion
  • 1 cup red and yellow bell pepper
  • 1/2 teaspoon minced garlic
  • salt and freshly ground black pepper
  • sour cream

Method

Step 1

In a crokcpot, combine all ingredients, except seasoning and sour cream. Cover and cook on high-heat setting for 4-5 hours.

Step 2

Turn off crockpot. Open and season with salt and blck pepper. Stir well.

Step 3

Ladle chicken stew into soup bowls. Stir in sour cream and serve immediately.
