Fried Mint Chicken Recipe
This fried chicken parts have unbelievable taste and flavor.
Makes 4-6 servings
Ingredients: 4 cloves garlic, peeled and finely chopped, 1/2 cup (125 ml) unsalted butter, 2 pounds (960 g) broilers, 1 cup (250 ml) all-purpose flour, 1 teaspoon salt, 1/4 teaspoon freshly ground black pepper, 1/2 cup (125 ml) fresh mint leaves
Instructions: In a large pan, melt butter over medium heat. Add chopped garlic and fry, stirring, until golden. Cut chicken into quarters and dip into the seasoned flour. Fry chicken pieces in the garlic butter until tender, turning occasionally.
Remove pan from the heat and add mint leaves, then cover the pan with lid, and let mixture stand for 3-4 minutes. Transfer fried chicken on serving plates. Serve hot.
Easy Fried Chicken Breasts with Lemon and Capers
Ingredients
- 1/4 cup all-purpose flour
- 1/4 teaspoon freshly ground black pepper
- 1/2 teaspoon paprika
- 2 skinless and boneless chicken breast
- 5 teaspoons corn oil
- 1/4 cup (60 ml) low-sodium chicken broth
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons capers, drained
- 1 medium yellow onion, peeled and diced
Method
Step 1
Combine the first three ingredients on a plate. Mix well.
Step 2
Press the chicken breasts into the prepared mixture, coating them evenly all over and shaking off any excess. In a heavy skillet, heat the corn oil over moderately high heat for, approximately,1 minute. Add chopped onion and fry, stirring occasionally, until golden brown. Add the chicken breasts and cook about 3-5 minutes on each side; do not overcook. Transfer chicken breasts to a heated plate.
Step 3
Add the chicken broth to the skillet, scraping up any browned bits on the bottom. Stir in freshly squeezed lemon juice and capers and heat through. Pour the sauce over chicken breasts and serve immediately.
