Easy healthy strawberry muffins recipe. Very easy, healthy, and delicious dessert cooked in an oven. There are a few ways to bake these muffins. First way; using a milk (adapted from http://allrecipes.com/ ) and second-using eggs, apple juice and cinnamon. Here is the first method:

Easy Healthy Strawberry Muffins Recipe

Serves 8

Ingredients: 1/4 cup (60 ml) canola oil, 1/2 cup (125 ml), 1 large egg, beaten, 1/2 teaspoon salt, 2 teaspoons baking powder, 1/2 cup granulated sugar, 1¾ cups all-purpose flour, 1 cup (0.24 l) chopped fresh strawberries

Instructions: Preheat your oven to 375º F (190º C). Grease with cooking spray 8 cups (1.89 l) muffin tin. In a small mixing bowl, combine corn oil, milk, and beaten egg. Stir lightly. In a large mixing bowl, combine all-purpose flour, salt, baking powder, and sugar. Stir in chopped fresh strawberries and mix well to coat with flour. Stir well, then pour dry mixture into the milk mixture. Mix well.

Fill the muffins cups. Bake in preheated oven for 25 minutes or until a toothpick inserted in the center of muffins comes out clean. Turn off the oven and allow muffins to cool on the wire rack. Transfer cooled strawberry muffins into the serving platter. Serve warm with a sour cream.

Ingredients

  • 2 cups sifted all-purpose flour
  • 1 cup whole-wheat flour
  • 1 cup granulated sugar
  • 4½ teaspoons baking powder
  • 1½ teaspoons ground cinnamon
  • 3/4 teaspoon salt
  • 1 egg white
  • 2 large eggs, beaten
  • 1 cup (250 ml) apple juice
  • 1/2 cup (125 ml) vegetable oil
  • 2 cups sliced fresh strawberries

Method

Step 1

Preheat the oven to 400 F.

Step 2

In a large mixing bowl, combine both flours, sugar, baking powder, cinnamon, and salt. Mix well.

Step 3

In a medium-size bowl, combine beaten eggs and egg white. Lightly beat them. Stir in apple juice and vegetable oil.

Step 4

Add the egg mixture to the flour mixture, stirring the ingredients until they just moist. Gently stir in all but 24 slices of fresh strawberries. Divide the batter among 24 greased muffin cups. Top each muffin with a reserved strawberry slice.

Step 5

Place the muffin tins in the hot oven. Bake in preheated oven for 25 minutes or until toothpick inserted in the center comes out clean.
