Homemade Coffee Ice Cream Recipe
Makes 6-8 servings
Ingredients: 1 cup (250 ml) half-and-half cream, 2 cups (500 ml) whipped cream, 3/4 cup granulated sugar, 7 tablespoons whole coffee beans, 6 large egg yolks, 1 teaspoon vanilla extract
Instructions: In a large saucepan, combine half-and-half, whipped cream, sugar, and coffee beans. Stir well. Heat to very hot but still a bit below boiling, stirring to make sure that the sugar does not stick to the bottom. Remove from heat and allow steeping for 45 minutes, to develop a good coffee flavor.
In a small mixing bowl, beat egg yolks and sugar until pale yellow and thick. Pour in 1/4 of the warm cream, whisking constantly, then whisk the rest.
Return custard to a clean pan and cook over medium heat until a light custard has formed (about 175º F (85º C)). Do not overcook.
Remove from the heat, strain into a clean bowl, cover with plastic wrap and cool. Transfer to an ice-cream machine, following manufacturer’s directions.
Homemade Caramel Ice Cream Recipe
Makes 10-12 servings
Ingredients: 2 cups (500 ml) whipped cream, 1 cup (250 ml) half-and-half cream, 1 cup (250 ml) milk, 1 cup granulated sugar, 1 teaspoon vanilla extract, 3 tablespoons water, 8 egg yolks
Instructions: In a large saucepan, combine whipped cream, half-and-half, and milk. Stir well. Heat creamy mixture to scalding (just below boiling) and remove from the heat.
In a small heavy bottom pan, combine sugar, vanilla extract, and water. Stir well and place over high heat. Swirl the pan to dissolve sugar. Cook until the sugar caramelizes and turns dark brown. Have a large pan of cold water ready. As soon as the caramel starts to smoke, remove it from the heat immediately, and lower the pan briefly into cold water. This will prevent it from continuing to cook.
Pour the warm cream into the caramel, whisking the cream as you do so. Return to the heat and stir until caramel is dissolved. Remove from the heat.
Beat the eggs yolks until well blended. Pour the caramel cream into beaten yolks, whisking continuously. Pour the mixture into a clean pan and return to the heat. Cook over medium heat, stirring constantly until a light custard has formed.
Remove from the heat and strain into a clean bowl. Cover with plastic wrap and allow cooling. Transfer to an ice-cream machine, following manufacturer’s directions.

Easy Homemade Vanilla Ice Cream Recipe
Ingredients
- 2 cups granulated sugar
- 6 tablespoons all-purpose flour
- 1 teaspoon salt
- 5 cups (1.25 L) milk
- 6 eggs
- 4 cups (1 L) half-and-half
- 3 tablespoons vanilla extract
- 2-3 pounds rock salt
Method
Step 1
In a heavy saucepan, with a spoon, combine sugar, flour, and salt.
Step 2
In a medium bowl, with hand beater or wire whisk, beat milk and eggs together until well blended. Stir into sugar mixture until smooth.
Step 3
Cook over low heat, stirring constantly until the mixture thickens and coats a spoon, about 30-45 min, being sure custard does not boil or it curdles. Remove saucepan from the heat.
Step 4
Cover the surface of the thickened mixture with waxed paper and refrigerate until thoroughly cooled, for approximately 2 hours.
Step 5
Pour the half-and-half vanilla extract and cooled custard mixture into ice-cream freezer can. Place dasher in the ice cream freezer can. Put the lid on the can and place the can in a bucket.
Step 6
Attach motor or hand crank to the freezer can. Fill the bucket half full of ice; sprinkle with 1/4 cup rock salt. Add -inch ice and 1/4 cup salt. Freeze according to manufacturer's directions, adding more ice and salt as needed. Freezing will take 35-45 min.
Step 7
Remove motor or hand crank. Wipe the can lid and remove. Remove dasher. With a spoon, pack down the soft homemade ice cream. Cover opening of the freezer can with waxed paper and then replace the can lid. Put a cork in the hole in the center. Add more ice and salt to cover can lid. Let stand to harden homemade ice cream 2-3 hours and salt as needed.
