Easy Pressure Cooker Potato Sausage Hash Recipe
Ingredients
- 1 tablespoon olive oil
- 1/2 pound (240 g) bulk sweet Italian sausages, sliced
- 1 large yellow onion, peeled and chopped
- 1 Β½ pounds (740 g) medium sweet potatoes, peeled and cubed
- 2 tablespoons Worcestershire sauce
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon salt
- 1 yellow bell pepper, seeded and sliced
- 1/4 cup (60 ml) chicken broth
- 1 red bell pepper, seeded and sliced
Method
Step 1
In a pressure cooker, heat olive oil over medium heat. Add sliced sausages and cook, stirring, until browned, for about 4 minutes.
Step 2
Using a slotted spoon, transfer cooked meat to a bowl.
Step 3
Add chopped onion to the pot. Cook, stirring, until browned, for about 8 minutes. Stir in cubed sweet potatoes, bell peppers, Worcestershire sauce, cooked sausages, and seasoning. Toss well, then drizzle with chicken broth.
Step 4
Close the pot and lock the lid. Set the machine to cook at high heat. Set the timer to cook for 18 minutes.
Step 5
Open the pressure cooker, using a Quick Release method. Bring sausage mixture to a full simmer. Cook, without stirring, until any liquid in the cooker boils away and the bottom of hash browns.
Step 6
Turn off the pressure cooker. Transfer sausage potato hash to a serving bowl. Serve hot.
