Slow Cooker Sausages and Onion Casserole Recipe

This is a beef stock-based sausage recipe. Very easy and simple.

Makes 4 servings

Ingredients: 1 tablespoon (15 ml) olive oil, 8 pork or beef sausages, 3 medium yellow onions, peeled, halved, and sliced into half-moons, 2 tablespoons (30 ml) plain flour, 2 cups (500 ml) beef stock, 3 tablespoons (45 ml) chutney, 1 tablespoon Worcestershire sauce, 1 teaspoon freshly ground black pepper

Instructions: In a large frying pan, heat olive oil over medium heat. Add sausages and brown on all sides. Remove browned sausages from the frying pan and transfer to a 6-quart (6 L) slow cooker. Add onions to the same frying pan and cook, stirring occasionally, until translucent.

Stir in the plain flour and cook gently for a further 1-2 minutes, scraping all brownies from the bottom of the pan.

Remove the onion mixture from the heat and pour in beef stock. Return to the heat and bring to a boil, stirring, over medium heat. Stir in the remaining ingredients.

Remove the onion mixture from the heat and transfer it to the slow cooker. Close the cooker and cook on low heat setting forΒ  5-8 hours or until sausages are cooked through.

Turn off the slow cooker and open the lid. Stir sausage mixture well and adjust seasoning. Transfer cooked sausages and onions to serving plates. Serve hot. Are you looking for more slow cooker recipes?

Easy Slow Cooker Sausage Casserole Recipe

Ingredients

  • 8 sausages
  • 2 tablespoons unsalted butter
  • 1 yellow onion, peeled and finely chopped
  • 2 teaspoons crushed garlic
  • 2 tablespoons plain flour
  • 1 tablespoon Worcestershire sauce
  • 1 cups frozen peas, thawed
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 3 cups (750 ml) beef stock

Method

Step 1

Grease a large frying pan with nonstick cooking oil. Add sausages and cook until golden brown.

Step 2

Remove browned meat from the frying pan and cut it into thick slices.

Step 3

Add the butter, onion, and garlic to the pan. Cook, stirring occasionally, for about 1 minute.

Step 4

Stir in the plain flour. Cook for further 2 minutes.

Step 5

Slow stir in the beef stock and Worcestershire sauce. Mix well and transfer the mixture to the slow cooker.

Step 6

Close the cooker and cook on a low-heat setting for 4-6 hours.

Step 7

Turn off the slow cooker and open the lid. Season to taste with salt and black pepper. Transfer sausage and vegetables to serving plates. Serve immediately.
