Warm Spinach Dip Recipe
Very easy vegetarian recipe.
Makes 1½ cups (375 ml)
Ingredients: 1¼ cups (310 ml) sour cream, 1/2 cup coarsely chopped fresh spinach, blanches and thoroughly dried, 1/3 cup grated Parmesan cheese, 1/4 cup shredded Cheddar cheese, 1/2 teaspoon minced garlic, 1/4 cup thinly sliced green onions
Instructions: In a large mixing bowl, combine sour cream, spinach, Parmesan and Cheddar cheeses, and minced garlic. Mix well and divide cheese mixture equally into two ramekins. Preheat the oven to 300º F (150º C). Bake in preheated oven until tops are golden brown and bubbling, for about 20 minutes. Turn off the oven. Remove spinach dip from the oven, garnish with sliced green onions. Serve immediately.
Cheesy Spinach Dip Recipe
Makes 4 cups (1 L)
Ingredients: 1 tablespoon olive oil,2 yellow onions, peeled and finely chopped, 4 cloves garlic, peeled and minced, 10 oz (300 g) fresh spinach leaves, washed and coarsely chopped, 1 tomato, peeled, seeded and coarsely chopped, 2 cups shredded Cheddar cheese, divided, 1 cup (125 ml) cream cheese, softened, 2 tablespoons sour cream, 1 tablespoon Worcestershire sauce, salt and freshly ground black pepper
Instructions: In a large nonstick skillet, heat olive oil over medium heat. Add chopped yellow onions and cook, stirring, until softened, for about 3 minutes. Stir in minced garlic and chopped spinach and continue to cook, stirring, until spinach wilted, for further 4 minutes.
Transfer cooked spinach mixture to a food processor fitted with metal blade. Add tomato, 1½ cups shredded Cheddar cheese, sour cream, and Worcestershire sauce. Blend until smooth. Season to taste with salt and black pepper and stir well.
Transfer spinach mixture to prepared ovenproof dish. Top with remaining Cheddar cheese. Preheat the oven to 400º F (200 °C). Bake in preheated oven until mixture is bubbling and the top is lightly browned, for about 25 minutes.
Turn off the oven. Carefully remove the ovenproof dish from the oven and set aside. Allow cooling completely. Serve spinach dip with sliced baguette or potato chips.
Easy Spinach Water Chestnut Dip Recipe
Ingredients
- 2 tablespoons unslated butter, softened
- 1 leek, white and light green parts only, washed and thinly sliced
- 2 cloves garlic, peeled and chopped
- 10 oz (300 g) fresh spinach leaves
- 2 teaspoons Dijon mustard
- 1/4 red chile pepper
- 4 oz (120 ml) creame cheese, softened
- 1/4 cup (60 ml) sour cream
- 1/2 cup sliced water chestnuts
- salt and freshly ground black pepper, to taste
Method
Step 1
In a large nonstick skillet, melt butter over medium-high heat. Add sliced leek parts and cook, stirring, until softened, for about 5 minutes.
Step 2
Stir in chopped garlic and cook, stirring, for further 1 minute. Add spinach and continue cooking and stirring until spinach wilted, for about 2 minutes.
Step 3
Remove spinach mixture from the heat. Stir in Dijon mustard and red chili pepper to taste.
Step 4
Transfer spicy spinach mixture to a food processor. Add remaining ingredients. Process until smooth, for about 1 minute.
Step 5
Season with salt and black pepper. Serve immediately.
