Classic Sponge Cake Recipe
Makes 4-6 servings
Ingredients: 3 large eggs, 1/2 cup (125 ml) sugar, 3/4 cup (180 ml) cornstarch, 2 tablespoons (30 ml) all-purpose flour, 1 teaspoon (5 ml) baking powder, 1¼ cups (310 ml) whipped cream, jam or filling, confectioners (superfine) sugar
Instructions: Grease and flour 2 8-inch (20 cm) round layer pans. Preheat the oven to 400º F (200º C). Separate the eggs. in a small mixing bowl, whip egg whites until stiff. Add the yolks and beat again until thick. Beat in the sugar 2 tablespoons (30 ml) at a time.
In a medium mixing bowl, combine cornstarch, all-purpose flour, and baking powder. Stir well and fold the dry mixture into the beaten eggs and sugar. Divide the mixture between the prepared pans. Bake in preheated oven for 15 minutes. Let stand for 3 minutes before turning out onto a wire cooling rack to cool.
Sandwich the sponges with whipped cream, jam, or another filling. Sprinkle the top with confectioner (superfine) sugar. The cakes may also be served separately with whipped cream on top – much easier to eat this way.
Sponge Drops Recipe
Makes 36 sponge drops
Ingredients: 2 large eggs, 3 tablespoons (45 ml) sugar, 3 tablespoons (45 ml) all-purpose flour, 2 tablespoons (30 ml) cornstarch, 1/8 teaspoon salt, 1 teaspoon baking powder, For Filling: 1¼ cups (310 ml) whipped cream, confectioners (superfine) sugar
Instructions: Cover 2 large baking sheets with wax paper, shiny side up. Preheat the oven to 375º F (180º C). Separate the eggs. In a small mixing bowl, whip egg whites until thick. Add yolks and beat again until very thick. Beat in the sugar 2 tablespoons (30 ml) at a time.
In a medium mixing bowl, combine all-purpose flour, cornstarch, salt, and baking powder. Stir well and fold into the egg mixture. Drop the mixture from a teaspoon onto the prepared baking sheets, leaving 1 inch (2.5 cm) between each drop. Bake in the preheated oven for about 8 minutes, or until golden brown.
Turn off the oven and remove sponge drops at once from the sheets. Cool on a wire cooling rack. Sandwich in pairs with 2 teaspoons of sweetened whipped cream, at least 2 hours before serving.
Easy Victoria Sponge Cake Recipe
Ingredients
- 3 large eggs
- 8 oz (240 g) caster (superfine) sugar
- 8 oz (240 g) self-raising flour + 2 teaspoons baking powder combined together
- 4 oz (120 g) softened unsalted butter
- 3 oz (90 g) margarine
- 1 jar strawberry jam
- 7 oz (210 ml) whipped cream
- icing sugar
Method
Step 1
Preheat the oven to 350 F (175 C).
Step 2
Grease 2 8-inch (20 cm) baking sheets. Line the bottom with lightly greased parchment paper.
Step 3
In a large mixing bowl, combine eggs, sugar, self-raising flour, baking powder, softened butter, and margarine. Mix, using an electric hand mixer, until completely combined.
Step 4
Divide the cake batter between 2 greased baking sheets. Bake in preheated oven for 25 minutes or until golden brown.
Step 5
Turn off the oven. Carefully invert baked cakes onto the wire rack. Cool completely.
Step 6
Sandwich the sponge cakes with whipping cream and strawberry jam. Sprinkle with caster sugar. Serve warm.
