Ingredients
- 1Β½ lb(750g) fillet steak
- 1 tablespoon vegetable oil
- 1 teaspoon vinegar
- 2 oz (60 g) lard
- 1 wineglass dry red wine
- 2 teaspoons sugar
- 4 tablespoons beef stock
- 1 tablespoon all-purpose flour
Method
Step 1
The meat should be browned on a spit,but can be browned on a hot frying pan without fat,basted with mixed oil and vinegar.
Step 2
Separately brown the sugar,add flour and mix the beef gravy. Add wine and stock.
Step 3
Slice the meat and pt in a small saucepan. Brush each piece with vegetable oil. Cover with the sauce and braise until tender (20-30 minutes).
