Choose a nice, fresh salmon, well-scaled. Rinse it in cold running water and pat dry with paper towels. To make your job easier, slice off the head. Now you are ready to remove the fillets from the bone.
Using a very sharp knife, slice along the back of the salmon to locate the backbone. When the first fillet is removed, cut away the backbone to release the second fillet.

Five-Spice Glazed Salmon Fillets Recipe
Ingredients
- 1/4 cup (60 ml) molasses
- 4 teaspoons soy sauce
- 1 teaspoon five-spice powder
- 2 large cloves garlic, peeled and minced
- 4 salmon fillets
- 1 tablespoon orange zest
- fresh cilantro or parsley, for seving
Method
Step 1
In a small mixing bowl, combine molasses, five-spice powder, soy sauce, and minced garlic. Mix well.
Step 2
Place salmon fillets skin side down on a large plate. Pour the molasses mixture over it. Flip the fillets so they are skin side up. Set aside and allow the fish to marinate for 15 minutes at room temperature.
Step 3
Place a rack 6 inches (15 cm) from the broiler, then heat the broiler on high. Line a large rimmed baking sheet with aluminum foil and grease with nonstick cooking spray.
Step 4
Arrange marinated salmon skin side down on the baking sheet. Brush the fish fillets with any remaining marinade from the plate.
Step 5
Broil the salmon for 5-8 minutes, or until cooked through. Remove broiled fillets from the heat and transfer to serving plates. Garnish with orange zest and parsley. Serve hot.
