Fried lamb chops with garlic and anchovy.Very delicious Greek lamb recipe.
- 2 pounds (960 g) beat end of neck lamb cutlets,fat trimmed
- 2 garlic cloves,peeled and 1 clove crushed
- 5 tablespoons olive oil
- sea salt anf freshly ground black pepper
- sprigs of rosemary
- 2 anchovy fillets
- 3 tablespoons white wine vinegar
Preheat olive oil in a large frying pan. Add crushed garlic and lamb cutlets. Fry on both sides until golden,then season to taste with slat and black pepper.
Reduce heat and cook for a further 10-15 minutes.
In a blender,combine a few pieces of rosemary,remaining garlic and anchovies. Mix well,gradually stirring in vinegar.
Add garlic mixture to frying pan and cook until the liquid reduces by half. Arrange lamb cutlets on warmed serving platter and spoon cooking liquid over.
