- 2 cups fresh basil leaves
- 2 garlic cloves,peeled
- 1 tablespoon pine nuts
- olive oil
- 2 handfuls arugula
- 8 lamb chops
- salt & freshly ground black pepper to taste
In a mixing bowl,combine the pesto,basil leaves,garlic,pine nuts and sufficient olive oil to produce a creamy mixture,adding the oil in a stready stream. Season pesto mixture with salt and black pepper.
Arrange the arugula on serving plates.
Wash and dry lamb chops and season with salt and black pepper.
In a large skillet,preheat a little olive oil and fry lamb chops for 2-3 minutes on each side,until golden brown.
Place two lamb chops on each serving plate. Serve fried lamb chops with pesto mixture.
