Fried pepper shrimp.Shrimp with black pepper,salt and spices cooked fried in deep fryer.
- 1 pound(480 g)large shrimp,shells on
- vegetable oil fro frying
- 4 egg whites
- 1 cup(250 g) potato starch
- 1 tablespoon garlic salt
- 2 tablespoons freshly ground black pepper
- 1 teaspoon kosher salt
- 1/4 teaspoon Chinese five-spice powder
Slice each shrimp along the back, using a sharp knife, leaving the tail segment intact.
In a frying pan,preheat vegetable oil to 400ºF(200ºC).
In a mixing bowl,lightly beat egg whites.
In another bowl,combine potato starch,garlic salt,black pepper,kosher salt and Chinese five-spice powder. Mix well and set aside.
Add shrimp to beaten egg whites and stir well to coat. Using a colander,drain excess egg whites.
In a bowl,combine drained shrimp with seasoning. Toss well.
Place seasoned shrimp,3-5 pieces at a time,to deep fryer and fry for 30-45 seconds. Remove from deep fryer and drain with paper towel.
Serve fried pepper shrimp hot.
