Grapefruit and Campari sorbet.Very delicious dessert.
- 3 large fresh grapefruits,peeled,cutting away and discarding white membrane
- 2 cups (500 ml) water
- 1½ cups sugar
- 1 egg white,lightly beaten
- 1 cup (250 ml) Campari
Carefully section grapefruit,running sharp knife between each segment.
These should be about 3 cups grapefruit flesh and 1 cup juice. Discard any seeds.
In a food processor,combine grapefruit sections and juice. Blend as thoroughly as possible. There should be about 3½ cups.
In a small saucepan,combine the water and sugar. Mix and bring to a boil. Cook for 5 minutes.Set aside and let cool.
In a mixing bowl,combine cooled liquid and grapefruit mixture. Blend well.There should be about 5½ cups. Add Campari and chill completely.
Pour grapefruit mixture into an ice cream machine and freeze according to the manufacturer's instructions. When the mixture starts to freeze,add the egg white. Continue freezing grapefruit and Campari sorbet to desired consistency.
