Grilled Green Mussels with Curry Butter

Serve this delicious appetizer with warm crusty bread. Recipe adapted from https://www.allrecipes.com/recipe/161908/grilled-mussels-with-curry-butter/

Makes 4 servings

Ingredients: 3 tablespoons (45 ml) unsalted butter, softened, 2 cloves garlic, peeled and pressed, 1 teaspoon (5 ml) curry powder, 1/2 teaspoon (3 ml) freshly ground cumin, 1/8 teaspoon salt, 2 pounds (960 g) green mussels, scrubbed and debearded, 1 cup (250 ml) chopped red bell pepper, 1/4 cup (60 ml) chopped fresh parsley, 1 lime, thinly sliced, 1 lime, cut into wedges

Instructions: Preheat your grill over medium-high heat. Lightly grease with the nonstick cooking spray the grate.

Meanwhile, in a large mixing bowl, combine butter, garlic, curry powder, cumin, and salt. Stir well. Place 4 large aluminum foil sheets on a flat surface. Place an equal amount of mussels on each aluminum sheet. Top with the curry mixture. Sprinkle chopped red bell pepper and parsley over the top. Top each portion with a lime slice, then fold foil ends and wrap tightly.

Cook on the preheated grill until mussels have opened. Carefully open the foil and discard any unopened mussels. Remove baked mussels from the oven and transfer to small bowls. Garnish with lime wedges and serve hot.

Grilled Green Mussels with Cumin


Ingredients

  • 1 pound (480 g) green mussels
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 tablespoon minced garlic
  • 1 tablespoon finely chopped bread crumbs
  • chopped fresh parsley

Method

Step 1

Preheat oven to 375°F (180°C).

Step 2

In a mixing bowl, combine garlic, herbs, cumin, and butter. Mix well, using a wooden spoon.

Step 3

Add to garlic mixture bread crumbs and black pepper. Stir well. Add to garlic mixture bread crumbs and black pepper. Stir well.

Step 4

Grill mussels in the oven for 2 minutes. Serve grilled green mussels garnished with chopped fresh parsley.
