Grilled salmon steak recipe.

Grilled Moroccan Salmon Recipe

This is a traditional Moroccan fish recipe. Consider Moroccan grilled fish with charmoula, a tangy cilantro cumin sauce. The charmoula does double duty as a marinade and a sauce.

Makes 4 servings
Ingredients: 1/2 cup (125 ml) each: fresh cilantro leaves, flat-leaf parsley leaves, 2 cloves garlic, peeled and coarsely chopped, 1 teaspoon (5 ml) sweet paprika, 1/2 teaspoon (3 ml) each: kosher salt, freshly ground black pepper, ground coriander, ground cumin, hot red pepper flakes, 3 tablespoons 45 ml) freshly squeezed lemon juice, 1/2 cup (125 ml) extra-virgin olive oil, 4 pieces salmon steaks

Instructions: In a food processor, combine the cilantro, parsley, garlic, paprika, coriander, cumin, hot red pepper flakes, salt, and black pepper. Process until finely chopped. Pour in lemon juice and process until coarse purée forms. Pour in extra-virgin olive oil. Process until smooth. Taste for seasoning, adding more salt, hot pepper flakes, and lemon juice. The charmoula should be highly seasoned.

Rinse salmon steaks under cold running water. Pat them dry with paper towels. Pour 1/3 of charmoula over the bottom of a baking dish, just enough to hold the salmon steaks in one layer. Arrange the salmon pieces on top. Spoon 1/2 of the remaining charmoula over and set the rest of charmoula aside.

Cover the baking dish and refrigerate for 2-4 hours (the longer it marinates, the richer flavor will be).

Remove marinated salmon from the refrigerator. Drain and discard the marinade. Preheat the grill to high. Grease with cooking oil the grill grate. Cook, turning once, for 3-5 minutes per side.

You can grill sardines in this manner. They will be done after 3-5 minutes.

Grilled Salmon Steak Recipe

Ingredients

  • 1 pound (480 g) salmon steak
  • 2 tablespoons prepared butter-floured mix
  • 1 tablespoon sonflower oil
  • 1 ½ tablespoons freshly squeezed lemon juice
  • 1 tablespoon mustard
  • 1 tablespoon finely chopped fresh parsley
  • 1/2 teaspoon salt-free herb seasoning
  • 1/8 teaspoon cayenne pepper
  • 1/2 teaspoon salt

Method

Step 1

Cut salmon into serving-size pieces and arrange in a shallow bowl.

Step 2

In a mixing bowl, combine remaining ingredients. Mix well and pour mixture over salmon. Marinate 15 to 30 minutes, turning occasionally.

Step 3

Lightly spray grill with nonstick cooking spray. Grill salmon 4 to 5 minutes on each side until fish flakes easily with a fork.brush with marinade while grilling. Serve grilled salmon steak with lemon and fresh herbs.
