Ham and broccoli stuffed potatoes. Potatoes baked in the oven and stuffed with cheesy mixture cooked in the slow cooker.
Ham and Broccoli Stuffed Potatoes
Ingredients
- 10¾ oz(320 ml) condensed cream of celery soup
- 2 cups shredded smoked Gouda cheese
- 8 oz (240 g) cooked ham, diced
- 10 oz (300 g) frozen cut broccoli, thawed
- 6 medium potatoes, baked and split( recipe follows)
Method
Step 1
In a slow cooker, combine cream of celery soup, Gouda cheese, and ham. Cover the slow cooker and cook on low-heat setting for 1½ hours.
Step 2
Raise the temperature to a high-heat setting. Stir in thawed broccoli.
Step 3
Cover slow cooker and cook until broccoli is tender and heated through (about 45-60 minutes). Stir well before serving. Spoon evenly mixture over baked potatoes.
Step 4
Baked Potatoes: Preheat oven to 425°F(220°C).
Step 5
Scrub potatoes and pat dry. Wrap each potato in aluminum foil.
Step 6
Place wrapped potatoes in preheated oven and bake for 40-60 minutes or until tender. Roll each potato gently under your hand.
Step 7
Using a sharp knife, cut an X on top of each baked potato. Press in and up on the ends of each potato. Please note: bake the potatoes while the ham and broccoli mixture cooks.
