Homemade Easter Hot Cross Buns Recipe
Ingredients
- 1/4 cup (60 ml) dark rum
- 1/2 cup mixed dried fruits
- 1/2 cup dried raisins
- 1¼ cups (310 ml) milk at room temperature
- 2 large eggs, beaten, plus 1 eeg yolk (save egg white for the topping)
- 6 tablespoons unsalted butter at room temperature
- 2 teaspoons instant yeast
- 1/4 cup light brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1¾ teaspoons salt
- 1 tablespoon baking powder
- 4½ cups all-purpose flour
- For Topping:
- 1 large egg white
- 1 tablespoon milk
- For Icing:
- 1 cup plus 2 tablespoons caster (superfine) sugar
- 1/2 teaspoon vanilla extract
- pinch of salt
- 1½ tablespoons milk
Method
Step 1
Lightly grease a 10-inch (25 cm) square pan with nonstick cooking spray.
Step 2
In a medium mixing bowl, combine dark rum, dried fruits, and raisins. Mix well, then wrap with plastic wrap and microwave briefly, until fruits and liquid are very warm.
Step 3
Remove the bowl from the microwave and set aside. Allow to cool.
Step 4
Combine all the dough ingredients, including eggs and egg yolks from the separated egg, holding out fruits for the time being. Using an electric mixer or bread machine, knead the mixture until the dough is soft and elastic. Mix in cooled fruits and any liquid not absorbed.
Step 5
Cover the dough and set aside. Let it rise for 1 hour.
Step 6
Using greased hands, divide the dough into balls, forming 12-14 buns. Arrange buns in the greased square pan. Cover the pan and let them raising for 1 hour or until the buns have puffed up.
Step 7
Preheat the oven to 375 F (190 C). In a small mixing bowl, combine reserved egg white and 1 tablespoon milk. Whisk well, then brush it over the buns.
Step 8
Bake in preheated oven for 20 minutes or until the buns are golden brown and a toothpick inserted in the center of the bun comes out clean.
Step 9
Remove baked buns from the oven and transfer them to a cooling rack.
Step 10
Meanwhile, in a small mixing bowl, combine all icing ingredients. Mix well. When the buns are completely cool, pipe them in a cross shape atop each bun.
