I used boneless and skinless chicken thighs to make this recipe. Also, I used homemade chicken stock.

Ingredients
- 1/4 cup (60 ml) chicken stock
- 1/4 cup (60 ml) balsamic vinegar
- 1/4 cup (60 ml) maple syrup
- 1Β½ pounds (720 g) boneless and skinless chicken thighs, trimmed
- 8 slices Mozzarella cheese
- 3 cups cherry tomatoes, halved
- 1/2 cup fresh basil leaves, torned
Method
Step 1
In a 6-quart (6 L) electric instant pot, combine chicken stock., balsamic vinegar, and maple syrup. Mix well.
Step 2
Add chicken thighs and toss well to coat.
Step 3
Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 10 minutes.
Step 4
Using the quick Release method, bring pressure to normal. Carefully unlock and open the lid.
Step 5
Uisng tongs, remove cooked chicken thighs from the cooker and transfer to a large plate. Top each chicken thigh with slice of cheese.
Step 6
Place chicken under the broiler. Broil for 2-3 minutes or until cheese is melted. Remove broiled chicken from the broiler and transfer to a large serving plate.
Step 7
Switch the instant pot to the saute mode. Simmer the sauce for 4-5 minutes or until it starts to thicken. Stir in halved cherry tomatoes and continue simmering for a further 1-2 minues. Stir fresh basil. Pour the sauce over the cooked chicken. Enjoy!
