Ingredients

  • 3 skinless and boneless chicken breasts, sliced lengthwise
  • 1 teaspoon salt
  • 1 teaspoon fredhly ground black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1-2 tablespoons olive oil
  • 1 cup (250 ml) chicken stock
  • 1 teaspoon Italian seasoning
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup (250 ml) heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon chili flakes
  • fresh basil leaves, for garnish

Method

Step 1

To make tasty chicken, sprinkle salt, pepper, paprika, garlic powder, and onion powder on the chicken pieces.

Step 2

Turn on the Instant Pot's Saute setting and add olive oil once it's hot. Put in 3-4 chicken pieces at a time and cook for 30 seconds to 1 minute on each side to make them a little brown. Repeat this process instead of putting too much chicken in at once.

Step 3

After the chicken is cooked on both sides, add some chicken broth and use a spatula to scrape the bottom of the pan. Put in the Italian herbs and half of the chopped sun-dried tomatoes. Put all the chicken back in the pan, making sure it's covered in the broth. It's okay if it's not completely covered.

Step 4

To cook, close the lid and select Pressure Cook at High pressure for 10 minutes. When it's done, wait 5 minutes for the pressure to go down naturally, then Quick Release the rest of the pressure.

Step 5

Take out the chicken from the pot and turn on the Saute setting. Put in the creamy, Parmesan cheese, rest of the sun-dried tomatoes, and chili flakes (use however much you like). Mix it all together until the cheese melts and the sauce becomes smooth and thick. Turn off the Saute setting.

Step 6

Put the chicken back in and mix it with the sauce. Serve it over rice, mashed potatoes, or pasta and add fresh basil on top.
