What is Marry Me Chicken?

Marry Me Chicken is a yummy chicken dish with a creamy sauce made of Parmesan cheese and sun-dried tomatoes. People think it’s so tasty that they might want to marry the person who cooks it for them! But the real reason it’s so good is because of the delicious flavor. We made a version of this dish for the Instant Pot and it turned out great.

How to Make Marry Me Chicken in an Instant Pot/Pressure Cooker

To make Marry Me Chicken in an Instant Pot or pressure cooker, follow these easy steps. First, gather your ingredients: 3 large boneless and skinless chicken breasts, sliced lengthwise into 2 thinner cutlets. Season the chicken with 1 teaspoon each of salt, pepper, and paprika.

Next, preheat your Instant Pot or pressure cooker by selecting the sauté function. Add a tablespoon of olive oil and let it heat up. Once the oil is hot, add the seasoned chicken cutlets and cook for 2-3 minutes on each side, until they are browned.

After browning the chicken, remove it from the Instant Pot and set it aside. In the same pot, add 1 cup of chicken broth, 1/2 cup of sun-dried tomatoes (chopped), and 1/4 cup of grated Parmesan cheese. Stir well to combine.

Return the chicken to the Instant Pot, making sure it is submerged in the sauce. Close the lid and set the pressure cooker to high pressure for 8 minutes. Once the cooking time is complete, allow the pressure to release naturally for 5 minutes, then manually release any remaining pressure.

Carefully remove the chicken from the Instant Pot and transfer it to a serving dish. Spoon the sauce over the chicken and garnish with fresh parsley, if desired. Serve hot and enjoy the delicious flavors of Marry Me Chicken made in your Instant Pot or pressure cooker.

This recipe is perfect for a quick and flavorful weeknight dinner. The Instant Pot makes it even easier and faster to prepare, while still delivering tender and juicy chicken. Give it a try and impress your family or guests with this irresistible dish.

How to Store Leftovers

After enjoying your delicious Marry Me Chicken, you may find yourself with some leftovers. Properly storing these leftovers will help maintain their flavor and quality for future meals. Here are some tips on how to store your Marry Me Chicken leftovers:

1. Refrigerate: Allow the chicken to cool down to room temperature before transferring it to an airtight container. Place the container in the refrigerator within two hours of cooking to prevent bacterial growth.

2. Portion Control: Divide the leftovers into individual portions before storing. This will make it easier to reheat only what you need and avoid waste.

3. Freezing: If you don’t plan on consuming the leftovers within a few days, freezing is a great option. Place the chicken in a freezer-safe container or freezer bag, removing as much air as possible. Label the container with the date and contents for easy identification.

4. Reheating: When you’re ready to enjoy your leftovers, thaw frozen Marry Me Chicken in the refrigerator overnight. Reheat the chicken in the microwave or on the stovetop until heated through. Add a splash of chicken broth or water to prevent dryness.

By following these storage tips, you can extend the life of your Marry Me Chicken leftovers and enjoy them for future meals. Whether you choose to refrigerate or freeze, proper storage ensures that the flavors and textures remain intact, allowing you to savor the deliciousness of this dish even after it’s been cooked.

Sounds amazing, right? Well, the best part is, that you can make it in your Instant Pot without any hassle. This special recipe called Marry-Me Chicken will definitely make you love your Instant Pot even more!

  • 3 skinless and boneless chicken breasts, sliced lengthwise
  • 1 teaspoon salt
  • 1 teaspoon fredhly ground black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1-2 tablespoons olive oil
  • 1 cup (250 ml) chicken stock
  • 1 teaspoon Italian seasoning
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup (250 ml) heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon chili flakes
  • fresh basil leaves, for garnish

Step 1

To make tasty chicken, sprinkle salt, pepper, paprika, garlic powder, and onion powder on the chicken pieces.

Step 2

Turn on the Instant Pot's Saute setting and add olive oil once it's hot. Put in 3-4 chicken pieces at a time and cook for 30 seconds to 1 minute on each side to make them a little brown. Repeat this process instead of putting too much chicken in at once.

Step 3

After the chicken is cooked on both sides, add some chicken broth and use a spatula to scrape the bottom of the pan. Put in the Italian herbs and half of the chopped sun-dried tomatoes. Put all the chicken back in the pan, making sure it's covered in the broth. It's okay if it's not completely covered.

Step 4

To cook, close the lid and select Pressure Cook at High pressure for 10 minutes. When it's done, wait 5 minutes for the pressure to go down naturally, then Quick Release the rest of the pressure.

Step 5

Take out the chicken from the pot and turn on the Saute setting. Put in the creamy, Parmesan cheese, rest of the sun-dried tomatoes, and chili flakes (use however much you like). Mix it all together until the cheese melts and the sauce becomes smooth and thick. Turn off the Saute setting.

Step 6

Put the chicken back in and mix it with the sauce. Serve it over rice, mashed potatoes, or pasta and add fresh basil on top.
