Instant Pot Ratatouille
Ingredients
- 1/4 cup (60 ml) extra virgin olive oil
- 1 large Vidalia onion, peeled and thinly sliced
- 2 tablespoons crushed garlic
- 1 large eggplant, cubed
- 1 green bell pepper, seeded, cored, and chunked
- 1 red bell pepper, seesded, cored, and chunked
- 1 large zucchini , quartered
- 1 medium yellow squash, peeled and quartered
- 14.5 oz can (435 ml) of diced tomatoes
- 2 teaspoons Italian seasoning
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried basil
- 1 teaspoon Herbes de Provence
- 1 teaspoon seasoned salt
- 1/2 cup (125 ml) dry red wine
- 6 oz can (180ml) of tomato paste

Step 1
To make your Ratatouille in an instant pot, put in oil and press "Sauté" and "Adjust" until it's on "More." Wait for the screen to say "Hot," then add onions and stir for 3 minutes until they get soft and a little color. Next, add garlic and stir for 1 more minute. Stir everything together well.
Step 2
Place all the vegetables and seasonings in the pot and pour in some wine or vegetable broth along with diced tomatoes. Close the lid and press "Keep Warm/Cancel", then choose "Manual" or "Pressure Cook" and set it to High Pressure for 6 minutes.
