Instant Pot Wine-Braised Artichokes Recipe
To prepare artichokes, cut the top third of each one, then peel off the few outer layers of leaves. Trim the woody bits off the ends of stems. Cut each trimmed artichoke in half through stems. Remove any soft inner leaves.
Serve artichokes warm or at room temperature. Also, you can serve them with cocktail sauce, lemon vinaigrette, Caesar or ranch dressings.
Ingredients
- 4 large artichokes
- 1 medium lemon, halved
- fresh rosemary sprig
- 1 cup (250 ml) dry white wine
- ¼ cup (60 ml) olive oil
- ½ teaspoon salt
- ½ teaspoon freshly ground black pepper
Method
Step 1
Place trimmed artichoke halves in a 6-quart (6 L) electric instant pot. Squeeze the lemon halves over artichokes and drop them to the pot. Add rosemary sprig. Pour in the dry white wine and olive oil.
Step 2
Close the cooker and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 10 minutes.
Step 3
Uisng the Quick Release method, bring pressure to normal. Carefully unlock and open the lid. Transfer wine-braised artichokes to serving plates. Enjoy!
