Deep-Fried Cheese Curds Recipe

Makes 12 servings
Ingredients: 1 teaspoon (5 ml) salt, 6 large eggs, beaten, 3/4 cup (180 ml) all-purpose flour, 2 cups (500 ml) plain breadcrumbs, extra fine, 2 teaspoons (10 ml) garlic powder, 2 pounds (960 g) Bothwell SqueaK’rs cheese (White or Coloured)
Instructions: In a medium mixing bowl, combine beaten eggs and salt. Mix well. Place all-purpose flour in a separate container. In a third container, combine breadcrumbs and garlic powder. Stir dry ingredients well.
Roll the cheese in the flour, shaking off excess, then dip it in egg mixture and drain. Coat well with garlic-breadcrumb mixture. Dip curds into egg mixture again, drain and then roll them into breadcrumbs mixture a second time until well coated.
Repeat the procedure until all cheese curds are breaded twice. Arrange breaded cheese curds on a baking sheet, wrap with a plastic wrap and freeze.
Remove frozen curds from the freezer. Deep-fry at 375º F (180º C) for 90 seconds, then remove from the fryer, drain, using paper towels. Serve hot.

Italian Deep-Fried Cheese Recipe
Ingredients
- 1/2 yellow onion, peeled and finely chopped
- 1 oz (30 g) butter, melted
- 2 oz (60 g) long grain rice
- 4 oz (120 ml) chicken stock
- 1 teaspoon freshly grated Parmesan cheese
- pinch of grated nutmeg
- salt and freshly ground black pepper to taste
- 1 oz (30 g) lean cooked ham, finely chopped
- 1½ oz (45 g) Mozzarella cheese, cut into four sticks
- 1 large egg, lightly beaten
- 1 oz (30 g) breadcrumbs
- cooking oil for deep frying
Method
Step 1
melt a butter in a saucepan. Add chopped onion and cook until transparent.
Step 2
Add rice and stir over low heat for 2-3 minutes. Stir in chicken stock, cover and bring to a boil.
Step 3
Simmer gently for 15-20 minutes until rice is tender. Remove from the heat and stir in grated Parmesan cheese, nutmeg, salt, and black pepper. Set aside and let it cool completely.
Step 4
Beat a little egg and chopped ham into rice mixture. Place 2 teaspoons rice mixture in the palm of one hand. Top with Mozzarella cheese stick and cover with more rice mixture.
Step 5
Pat into a cylinder shape about 2½-inches (6,5 cm) long. Brush beaten egg over croquette and coat with finely chopped breadcrumbs. Repeat the same method with remaining ingredients.
Step 6
Preheat cooking oil in deep fryer to 360 F (180 C). Fry the croquettes for 5-6 minutes until golden.
Step 7
Drain on paper towels. Serve Italian deep-fried cheese hot.
