Lamb Pasta with Asparagus
Ingredients
- 1/2 pound (240 g) lamb chops
- 2 oz (60 g) asparagus, sliced
- 1 tomato, sliced
- 5 oz (150 g) pasta ribbons
- 3 teaspoons olive oil
- 1 tablespoon mint sauce
- 2 tablespoons clear honey
- sprigs of mint, to garnish
Method
Step 1
Place lamb chops in a casserole dish. Set turbo oven temperature to 400 °F (205 °C).
Step 2
Place the casserole dish on the lower grilling rack of the turbo oven and cook for 4-5 minutes, until the lamb has browned. Add vegetables and mushrooms to the casserole dish and cook for a further3-4 minutes.
Step 3
Cook the pasta in boiling water according to the instruction on the packet. Drain and mix together the oil, mint sauce, and honey. Add honey mixture to the casserole dish.
Step 4
Combine the lamb, pasta and vegetables and heat for 2-3 minutes, still on the lower grilling rack. Serve lamb pasta in warm bowls.
