Oven baked banana-chip cupcakes.Banana cupcakes baked in oven.
- 14 oz (420 g) banana quick bread and muffin mix
- 3/4 cup (180 ml) cold,fresh water
- 1/3 cup (80 ml) sour cream
- 1 large egg,beaten
- 1 cup miniature semisweet chocolate chips,divided
- 1 tablespoon shortening
In a large mixing bowl,combine the muffin mix,cold water,sour cream and egg. Mix until moistened.
Fold in half cup chocolate chips. Fill greased miniature muffin cups 2/3 full.
Preheat oven to 375°F(190°C).
Place muffins in preheated oven. Bake until a toothpick inserted in the center comes out clean(about 12-15 minutes).
Cool baked muffins for 5 minutes before removing from pans to wire rack to cool completely.
For frosting,in a small microwave-safe bowl,melt shortening and remaining chocolate chips. Stir well until smooth.
Frost cupcakes. Serve oven baked banana-chip cupcakes cold.
