Oven baked bananas in Madeira sauce. This is a very delicious dessert. Madeira and raspberries join flavor forces with dried apricots and cardamom to transform bananas into a special dessert.
Ingredients
- 10 oz (300 g) frozen raspberries with syrup,thawed
- 1 teaspoon freshly squeezed lemon juice
- 1/2 cup (125 ml) Madeira wine
- 1/2 teaspoon freshly ground cardamom
- 1/2 cup (125 g) diced dried apricots
- 1 teaspoon cornstarch
- 6 ripe bananas,peeled and sliced lengthwise
- 4 tablespoons brown sugar
- 4 tablespoons chopped nuts
Method
Step 1
Preheat the oven to 425 F (210 C).
Step 2
Reserve 2 tablespoons of raspberry syrup. In a small pot,combine raspberries,the rest of syrup,lemon juice,Madeira,cardamom and dried apricots. Stir well and bring to a boil. Reduce heat to low and simmer for 15 minutes,stirring occasionally.
Step 3
In a small mixing bowl,combine reserved 2 tablespoons of syrup and cornstarch. Mix well and stir into the hot mixture,cooking and stirring for 2 minutes.
Step 4
Arrange bananas in a large,shallow dish. Spoon the raspberry mixture down the center of each banana and sprinkle brown sugar over top.
Step 5
Bake in preheated oven, on the lower rack for 10 minutes or until bubbly.
Step 6
Cut each baked banana crosswise and transfer to serving plate. Divide Madeira-Raspberry sauce among the 6 servings. Sprinkle with chopped nuts and brown sugar. Serve warm.
