Oven baked cheesy potato cakes.This is very easy and delicious breakfast recipe.Adapted from http://www.globalfoodbook.com
- 10 small potatoes,peeled
- 1/2 cup (125 ml) fresh milk
- freshly grated Parmesan cheese
- 1 teaspoon unsalted butter,melted
- 2 eggs,beaten
- 1/2 teaspoon granulated sugar
- salt and freshly ground black pepper,to taste
Place peeled potatoes in a pot filled with water. Add salt to taste,bring to a boil and cook until tender.
Remove cooked potatoes from the heat and allow to cool.
Mash cooked potatoes with little water and milk to form a paste.
In a small mixing bowl,combine melted butter and eggs. Whisk well.Stir egg mixture into mashed potatoes. Add sugar and black pepper and mix well.
Lightly grease baking tins with nonstick cooking spray. Place potato batter into baking tins and sprinkle with grated Parmesan cheese.
Preheat your oven to 450 F (225 C). Bake in preheated oven for until golden brown.
Remove baked potato cakes from the oven. Serve warm.
