Oven baked eggs with potatoes and bacon. This is very simple and delicious recipe cooked in convection oven.
- 2 cups (500 g) fingerling potatoes , sliced
- 4 slices bacon , chopped
- 8 eggs
- 1 tablespoon olive oil
Preheat oven to 350 F (180 C).
Heat olive oil in frying pan. Add chopped bacon , and potatoes. Cook until potatoes almost cooked through.
Split the potato mixture in 4 large ramekins (8 smaller ramekins with only one egg in each) . Crack two eggs per larger ramekin or one if using smaller ones.
Place ramekins on a baking sheet. Bake in preheated oven for 10-15 minutes until the egg whites set but the yolk is still slightly runny.
