Oven baked eggs with potatoes and bacon. This is a very simple and delicious recipe cooked in a convection oven.

Ingredients

  • 2 cups (500 g) fingerling potatoes, sliced
  • 4 slices bacon, chopped
  • 8 eggs
  • 1 tablespoon olive oil

Method

Step 1

Preheat oven to 350 F (180 C).

Step 2

Heat olive oil in frying pan. Add chopped bacon, and potatoes. Cook until potatoes almost cooked through.

Step 3

Split the potato mixture in 4 large ramekins (8 smaller ramekins with only one egg in each) . Crack two eggs per larger ramekin or one if using smaller ones.

Step 4

Place ramekins on a baking sheet. Bake in preheated oven for 10-15 minutes until the egg whites set but the yolk is still slightly runny.
