Oven baked eggs with salmon and spinach. Eggs with smoked salmon and spinach cooked in a halogen (turbo) oven.

Oven Baked Eggs with Salmon and Spinach

Ingredients

  • small piece of butter, for greasing
  • 1 oz (30 g) baby spinach leaves
  • 2 oz (60 g) smoked salmon trimmings
  • 2 large eggs
  • 2 tablespoons light cream
  • grated Parmesan cheese
  • freshly ground black pepper

Method

Step 1

Put the lower grilling rack in turbo oven. Preheat halogen oven to 392°F (200°C).

Step 2

Lightly grease with butter two oval gratin dishes. Divide the spinach leaves and salmon between two dishes.

Step 3

Using the back of a teaspoon, make a small indent in the center of each dish. Carefully break an egg into each hollow. Pour light cream over salmon and spinach. Season with black pepper.

Step 4

Add the grated Parmesan cheese over the top of the eggs. Arrange two dishes into preheated turbo oven. Remove eggs from turbo grill and eat warm.
