Oven Bake Fruity Carrot Cake

Ingredients

  • 3 carrots, grated
  • 1 cup sugar
  • 11 oz (330 ml) water
  • 2½ oz(75 g) dates, chopped
  • 3 oz (90 g) raisins
  • 4 oz (120 g) butter
  • 2 teaspoons cinnamon
  • 1 teaspoon ground coriander
  • 1 pound (480 g) self-raising flour
  • 2½ oz(75 g) chopped nuts
  • 1 teaspoon baking powder
  • zest of 1/2 a lemon

Method

Step 1

In a large saucepan, combine the carrots, sugar, water, and dried fruit. Boil for about 2-3 minutes.

Step 2

Add the butter, cinnamon, and ground coriander. Remove from the heat and allow cooling completely(very important step!)

Step 3

Once completely cooled add the flour and baking powder. Add the nuts, lemon zest, and mix well.

Step 4

Set turbo oven temperature to 356° F(180° C).

Step 5

Place the cake mixture into a lined cake tin. Arrange on the low rack of halogen oven. Bake for 30 minutes.

Step 6

Reduce the temperature to 300° F(150° C) and bake for additional 30 minutes. Turn out oven baked fruity carrot cake onto cooling rack. Serve as is or top with icing.
