- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1 tablespoon grated lemon zest
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup cold butter,cubed
- 1 egg,beaten
- 3/4 cup (180 ml) buttermilk,unflavored yogurt
- 1 cup fresh or frozen blueberries
- For Topping:
- 1 tablespoon granulated sugar
In a large mixing bowl,combine flour,sugar,lemon zest,baking powder,baking soda and salt. Mix well. Cut in butter until mixture resembles coarse crumbs.
In a small mixing bowl,combine beaten egg and buttermilk. Mix well and add to flour mixture. Stir until a soft dough forms. Gently stir in blueberries.
Drop mixture by spoonful in 12 mounds on a greased baking sheet. For topping sprinkle with granulated sugar.
Preheat oven to 375°F(190°C). Bake in a preheated oven until golden(about 15-20 minutes). Allow to cool for few minutes on a wire rack. Serve oven baked blueberry lemon drop biscuits warm.
