Oven Baked Muffins
Ingredients
- 4 oz (120 g) self-raising flour
- 1²⁄³ oz (50 g) sugar
- 2½ oz (75 g) dried fruits (currants,sultanas,raisins)
- 2-3 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1 cup (250 ml) milk
- 1 large egg,beaten
- 4 tablespoons olive oil
Method
Step 1
Place law grilling rack in turbo oven. Set oven temperature to 356° F (180° C).
Step 2
In a mixing bowl, combine flour, cinnamon, nutmeg, sugar, and dried fruits. Mix well.
Step 3
In a large container, combine the milk, beaten egg, and olive oil. Mix well.
Step 4
Pour milk mixture into dry ingredients. Mix thoroughly.
Step 5
Place mixture in muffin cases. Arrange muffin cases(you can fit 10 on a tray) on the low grilling rack. Cover halogen oven and cook for 15-20 minutes until cooked.
Step 6
Put oven baked muffins on a cooling rack to cool.
