- 4 oz (120 g) self-raising flour
- 1²⁄³ oz (50 g) sugar
- 2½ oz (75 g) dried fruits(currants,sultanas,raisins)
- 2-3 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1 cup (250 ml) milk
- 1 large egg,beaten
- 4 tablespoons olive oil
Place law grilling rack in turbo oven. Set oven temperature to 356°F (180°C).
In a mixing bowl,combine flour,cinnamon,nutmeg,sugar and dried fruits. Mix well.
In a large container,combine the milk,beaten egg and olive oil. Mix well.
Pour milk mixture into dry ingredients. Mix thoroughly.
Place mixture in muffin cases. Arrange muffin cases(you can fit 10 on a tray) on the low grilling rack. Cover halogen oven and cook for 15-20 minutes until cooked.
Put oven baked muffins on a cooling rack to cool.
