Oven Baked Sea Bass Recipe
Ingredients
- 2 sea bass fillets (with skin on)
- 2 tablespoons olive oil
- 1 fennel bulb, thinly sliced
- 1 red onion, peeled and thinly sliced
- 1/4 cup (60 ml) dry white wine
- 2 sprigs cherry tomatoes, cut into small bunches
- 1 tablespoon capers
- salt and freshly ground black pepper
Method
Step 1
Using a sharp knife, slash the skins of fish fillets. Brush both sides of each fillet with some of the olive oil. Season with salt and black pepper.
Step 2
Put the low grilling rack in the turbo oven. Put a shallow baking dish large enough to hold the fish on top.
Step 3
Preheat the halogen oven to 392°F (200°C).
Step 4
Stir in half of the sliced onions to coat in the oil. Mix gently with the fennel.
Step 5
Transfer the fennel mixture to preheated shallow dish. Pour in the dry white wine and add the sea bass fillets, skin side up. the
Step 6
Open the halogen oven and arrange cherry tomatoes around the fish. Cover turbo oven and cook for 2 minutes more. Open the lid again, and sprinkle the remaining onion slices. Cover and cook for 2-3 minutes more.
Step 7
To serve baked sea bass, remove the dish from oven. Sprinkle with capers.
