- 8 boneless chicken thighs
- salt and freshly ground black pepper
- stuffing of your choice(see below)
- 1½ oz (45 ml) dry white wine
- vegetable oil
Lay the thighs,flesh side facing up on a chopping board. Season with salt and black pepper.
Divide the stuffing between the thighs,laying it in the indentation where the bone used to be. Roll each thigh up tightly and place,seam-side down in a large,flat-bottomed dish. Pour dry white wine in the dish,brush the skin all over with vegetable oil.
Preheat turbo oven to 400°F (200°C). Cook in preheated oven at the top until the chicken's just done and skin nicely brown(about 15 minutes). Serve oven baked stuffed chicken thighs with cooked rice or mashed potatoes.
Stuffing: Large handful of coriander;2-3 spring onions,chopped;2-3 slices of ginger,peeled and finely chopped. Onion,finely chopped;1 red chili,finely chopped;pinch of dried oregano;few drops of dry white wine and red vinegar. Handful of parsley,finely chopped;few shreds of lemon zest,finely chopped;garlic clove,peeled and finely chopped;pinch of dried thyme.
