Grilled Escargots for Christmas
Escargot for Christmas? Snails? Those slimy little things we used to pour salt on when we were kids? Nope, not those. Helix snails from France are the kind we prepare for Christmas dinner. They’re plump and not too fatty, unlike garden snails.
If you want to make escargot, you need to add a lot of butter before baking in the oven. I’ve made escargot three times now, and each time it gets better. For a special, last-minute appetizer, I buy them online—much cheaper than at the grocery store. You’ll need a special dish to put your snails in, or just use a baking dish.
And, don’t forget to serve it with crunchy French bread to dip in the garlic butter. Yum!
How to Make Escargots
Combine parsley, garlic, lemon juice, salt, pepper, and butter and put them in a blender. Blend until the mixture is smooth. Put small snails into their shells and use the butter mixture to seal them in.
Heat an oven at 400°F (205°C) and put the snails on the grilling rack inside. Cover the oven and cook for 5-7 minutes.

Oven Grilled Escargots
Ingredients
- 3½oz (100g) butter
- 1 tablespoon fresh parsley, finely chopped
- 1 garlic clove, peeled and crushed
- freshly squeezed lemon juice (from half of lemon)
- salt,white pepper to taste
- 12 escargots, precooked or canned
Method
Step 1
Combine parsley, garlic, lemon juice, salt, pepper ,and butter. Put in blender. Blend until smooth.
Step 2
Put the escargots into their shells. Seal the shells with butter mixture.
Step 3
Preheat turbo oven at 400°F (205°C). Arrange escargots on grilling rack. Cover turbo oven and cook for 5-7 minutes.
