Pressure Cooker Steak with Potato-Mushroom Gravy
Makes 4 servings
Ingredients: 1 tablespoon (30 ml) unsalted butter, 1 tablespoon (15 ml) olive oil, 2 pounds (960 g) flank steak, chunked, 1 medium yellow onion, peeled and chopped, 1 large sweet potato, peeled and grated, 1 tablespoon (15 ml) sweet paprika, 1/2 pound (240 g) mushrooms, chopped, 2 teaspoons (10 ml) stemmed fresh thyme leaves,, 1/2 teaspoon (3 ml) salt, 1/4 teaspoon (1 ml) ground cloves, 1/4 teaspoon (1 ml) cayenne pepper, 1 cup (250 ml) low-sodium fat-free beef broth, 3 tablespoons (45 ml) tomato paste
Instructions: Melt butter in an electric pressure cooker turned to the browning function. Add chunked beef and brown well, turning once, for about 6 minutes. Remove cooked beef from the pot and transfer to a big bowl.
Add onions to the cooker. Cook, stirring often, until softened, for about 3 minutes, then add grated potato, chopped mushrooms, paprika, thyme, salt, cloves, and cayenne pepper. Cook for further 1 minute, then pour in beef broth and stir well.
Stir in the tomato paste as the mixture comes to a simmer, scraping up any browned bits from the bottom of the pressure cooker. Stir in cooked beef with any accumulated juices. Close pressure cooker and lock the lid.
Set the machine to cook at high pressure. Set the timer to cook for 60 minutes.
Turn off the pressure cooker. Unlock and open the lid. Transfer chunked beef to serving bowls. Pour vegetable-mushroom sauce over. Garnish each serving bowl with shelled fresh peas. Enjoy!
Oven Grilled Mushroom Steak Recipe
Ingredients
- 1 teaspoon coarsely ground black pepper
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon garlic salt
- 2 rib-eye steaks (about 4 oz-120g each)
- 1 tablespoon olive oil
- 1 tablespoon honey mustard
- 1/4 teaspoon crushed dried rosemary
- 8 fresh medium mushrooms, stems removed
Method
Step 1
Combine black pepper, Cajun seasoning and garlic salt in a small cup. Sprinkle over both sides of each steak.
Step 2
Preheat lightly greased gas or charcoal grill for 5 minutes. Place steaks on the grill. Cook for 5-7 minutes until the desired doneness.
Step 3
Combine olive oil, mustard, and rosemary in medium bowl. Add mushrooms. Toss to coat. Place mushrooms on the grill. Close on grilled and cook for 4-5 minutes until tender. Serve with grilled steak.
